Since our Indian adventure I've felt inspired to experiment and recreate just some with the many dishes we sunk our teeth into. It's no uprise that the Indian diet is heavily focused on a vegan style of eating, which made it even more appealing! For me personally I've been experimenting with spiralized ANYTHING on and off for the past few years and I must say I'm quite faithful to the zucchini noodle (aka zoodles) as I find them to be the yummiest and easiest to incorporate into meals. Zoodles make for an effortless work day meal or family dinner, not only are they well know for their obvious health perks but also for their versatile nature. You can have them either warm of cold and it's as easy as pie to incorporate a little extra protein to keep you going for the day. To add, as per the title suggests this recipe doubles as a cake. I know what you're thinking...it just keeps getting better and better!! I purposely designed this recipe to have cake like characteristics, balancing the zest and herb notes making for a light and delicate mixture, similar to those of a traditional donut. Although these aren't quite vegan or gluten free, they are a "healthy" alternative to the usual fried donut, Let's be completely honest here though, donuts aren't quite donuts unless they come with a little sugar and gluten, all the fun things in life, am I right!? Apple Crumble is an absolute favourite in our household. This year I took a seat on the sideline and let my boyfriend, James wear the apron (figuratively speaking that is).
