To add, as per the title suggests this recipe doubles as a cake. I know what you're thinking...it just keeps getting better and better!! I purposely designed this recipe to have cake like characteristics, balancing the zest and herb notes making for a light and delicate mixture, similar to those of a traditional donut. Although these aren't quite vegan or gluten free, they are a "healthy" alternative to the usual fried donut, Let's be completely honest here though, donuts aren't quite donuts unless they come with a little sugar and gluten, all the fun things in life, am I right!?
