Prep Time – 10 minutes Cook Time – 20 minutes Serves – 4 people
1/3cup whole wheat/choice of flour
3cups milk (soy/rice/oat/cows)
3/4 cup cheddar
1/2 cup another cheddar (I used yellow)
1/2tsp salt and pepper
1/4tspregular chili powder
1tspgarlic salt powder
1 cup dry macaroni
1/4 cupgrated cheddar
1/2 tbsp garlic salt
Herb of choice (optional)
Add water and salt to a large pot and place over high heat for the pasta.
Prepare your cheese sauce: In a medium saucepan, melt the butter, then whisk in the flour and continue to whisk and cook for approx. 2 minutes.
Slowly add milk and whisk constantly. Let cook, stirring frequently until the sauce thickens, approx. 10 minutes.
Remove saucepan from the heat. Add cheese, salt, pepper, chili powder and garlic salt. Stir until the cheese is melted and all ingredients are incorporated. Set aside.
Preheat oven to 350F (175C) Oil or butter your baking dish (I used an 8-inch baking dish)
Once the water is boiling, add the macaroni and cook for the duration recommended on the package instructions. When the pasta is cooked, drain and rinse with cold water.
Add the cooked pasta to the cheesy sauce and mix. Spoon mixture into a prepared baking dish and sprinkle the top with a bit of additional grated cheddar cheese, then sprinkle with garlic salt, chilli powder and herb (optional).
Bake uncovered for 20 to 25 minutes, until the cheesy sauce has bubbled up around the edges and the top is golden. Let sit for a few minutes before serving.
