Prep Time – 15 minutes Cook Time - 30 minutes Serves – 6 Ingredients: Cake
I cup pears, diced
1/4 cup raisins
1/4 cup walnuts
1 teaspoon bicarb soda
80g butter, chopped OR coconut oil
1/2 cup brown sugar
1/3 cup maple syrup
1 1/3 cups whole wheat flour
1/2 tsp mixed spice
2 extra large eggs, beaten
1 cup brown sugar
300ml greek yogurt
1/2 tsp vanilla extract
60g butter, chopped
Chopped pear & whipped cream for garnish
Pre heat oven to 350 degrees. Line a 20cm cake pan with baking paper.
Place pears, raisins and 1 cup water in a small pan and simmer for 5 minutes.
Add bicarb soda, allow to fizz then stir in butter/coconut oil to melt. Add sugar, syrup and then eggs once mixture has cooled a little. Stir in flour, walnuts and mixed spice until smooth.
Spoon mixture into cake pan and bake for 25 minutes,
While your cake is in the oven, prepare sauce, combine; sugar, cream, vanilla and Greek yogurt in a saucepan over medium heat. Stir for 3 minutes or until boiling. Reduce heat to low and simmer for 2 minutes.
One your cake is golden remove from the oven and let cool for 10 minutes in pan before removing.
Slice and serve warm with chopped pear, sauce & whipped cream.

For the traditional sticky date cake swap the pear for dates.
